This ebook was conceptualised as a result of umpteen requests for recipes from friends and former customers of mine. I used to run a successful vegetarian restaurant in Australia, which I eventually sold (an offer I just couldn't resist!).
One of the main reasons why the restaurant was a runaway success was due to the fact that the foods had a very homemade touch/flavour to them. My recipes are easy to prepare and relatively cheap as we now find that grocery items seem to increase in tandem with the prices at the petrol pump.
As I travel around Australia, I find that more and more restaurants are getting emptier by the day and many are put in the market on fire sale. I would think this is most likely due to the high cost of living and no future tangible relieve seems to be in sight. Everyone is trying to save for rainy days and eating out looks like the easiest luxury to cut out from one’s expenditure. But don’t despair. With this ebook, you suddenly find yourself as an accomplished cook and you can have your friends over for dinner often without leaving a huge dent in your wallet.
The recipes here are very simple to follow. I especially do not like to stipulate the amount of seasoning (salt and sugar) as each of us has different taste. If I do, take it as a guide and no more. What might be very salty for some might be bland for others. There is no hard and fast rules in cooking. I prefer to use measuring cups instead of a weighing machine as no one has the time for that!
I cannot stress enough that the ingredients are just a guide and feel free to add or subtract any ingredients that you may like or dislike. Use vegetables and fruits that are in season-they are usually fresher and cheaper. There is no reason to pay a premium just to use cherries that are imported during winter. Use frozen raspberry or strawberry or any other alternatives that are cheaper. If you do not like celery, use french beans or others that you like. If the eggplant you have is big, cut down on the other vegetables or increase your seasoning. Cooking is all about trial and error with a bit of common sense and exploring your own creativity and imagination.
There are many vegetarians who shun onion and garlic for health and religious beliefs. As a result, some of the recipes are without garlic and onion. I must admit that garlic and onion do add to the taste of food but it certainly does not mean that food becomes unpalatable and bland without them. Far from the truth actually. Foods that are onion and garlic free are almost just as delicious in my opinion. For those who consume onion and garlic go ahead and use them in the onion and garlic free recipes.
The only animal products that are used in my recipes are dairy and free range eggs. I always insist on rennet-free cheeses in my vegetarian cooking as rennet is derived from the stomach of slaughtered new born calves. That is against the whole vegetarian philosophy. Vegans, please omit dairy and eggs and substitute with soy products instead.
I like to cook my food in a good quality non stick saucepan when possible to reduce fat in cooking. In my opinion a good non stick pan is a must have utensil in the modern kitchen.
